This recipe comes from my “home cooking class in Jaipur“
Ingredients
1kg chicken (boiler )
1 ” ginger piece
2 tbsp garlic
Make a paste of ginger, garlic & keep it aside
1 cup curd
4 tsp coriander powder
1 tsp turmeric powder
½ tsp chilly powder
Marinate the chicken/ boiler with the above mentioned ingredients & keep it in the fridge at least for 4 to 5 hours before cooking.
Sauce Recipe
4 to 5 tbsp cooking oil
250g onion finely chopped
5 to 6 whole red chillies
4 black cardamom
1/2 inch cinnamon
2 to 3 gr\
en cardamom
5 to 6 cloves
9 to 10 black pepper
2 bay leaves
1 cup water
How to Cook Jaipuri Chicken
Heat oil in a pan. Add all spices along with whole red chillies. Add finely chopped onions. Let it fry till the onions turn into golden red. Now add marinated chicken to it. Fry it till the chicken turns tender. Add water & simmer it for another 5 minutes. Garnish it with green coriander leaves & serve hot with chapati or rice.
